Fueled Friday - Grilled Tomato and Asparagus Salad

Grilled Tomato and Asparagus Salad 🍓🍃 - from @zarasveganfood

This took moments to prepare, it’s one of my favourites for when the weather is hot as it’s so light, healthy and refreshing☀️ This recipe was one adapted from the lovely @nourishing.amy ❣️ Ingredients: (Serves 2-3)

20 cherry tomatoes
150g of asparagus (roast with olive oil and salt and pepper for 15 minutes)
Gem lettuce - chopped
Small handful of parsley - finely chopped
1 can of drained chickpeas
1 avocado - chopped into cubes
15 strawberries - chopped in half
Handful of pomegranate seeds
Handful of almonds -

For the dressing:

1 lemon (zested and juiced)
1 tbsp of olive oil
1 tbsp balsamic vinegar
1/2 tsp Dijon mustard
Salt and pepper to taste
